The sugar cane process, also called ethyl acetate or EA decaffeination, was developed in Colombia and relies on a compound that occurs naturally in ripe fruit. Ethyl acetate is derived from fermented Colombian sugar cane and used to wash green coffee that has first been softened with water and steam. The solution bonds with caffeine and draws it out over repeated cycles until at least 97 percent is removed. A final steaming clears any trace of the compound, and the beans are dried back to a stable moisture. Because ethyl acetate is selective in what it removes, the coffee keeps its sweetness, body, and structure, avoiding the flat, muted character of many conventional decafs.Elevation: 1500-1800M

It is sourced from many smallholder members across several of Colombia's growing regions, where each altitude and microclimate adds something of its own to a rounded, balanced whole. Even the decaffeination happens in Colombia, through a locally developed process built on ethyl acetate from Colombian sugar cane, so the coffee's entire journey from cherry to caffeine-free green bean stays close to the farms and communities that grew it.
