    Fredy Orantes is a leader among the coffee growers of Santa Rosa, Guatemala, tending his farm Buena Vista at 1870 meters in Fraijanes. Only the ripest Catuai cherries are hand-selected and floated to remove any imperfect beans, then dried whole on raised beds for 25 to 30 days, turned by hand through the warmest hours of each day. A committed steward of his land, Fredy nurtures native shade trees and composts organic matter to keep the soil alive. In the cup, we get mixed berry balanced with milk chocolate and a sweet tamarind finish.

      Variety: Catuai

    Catuaí is a compact, high-yielding Arabica variety developed in Brazil from a cross of Mundo Novo and Caturra. Its shorter stature makes it well suited to dense planting and hand harvesting, and it holds its cherries firmly on the branch. Grown at 1870 meters in Fraijanes, this Catuaí ripens slowly and evenly, developing the dense, sugar-rich cherries that give the coffee its deep berry sweetness.

      Process: Natural

    A meticulous natural (dry) process. Only the ripest Catuaí cherries are selected, then soaked in water to float off dust and immature or malformed beans while lowering the microbial count and homogenizing cherry temperature. The whole cherries are dried on raised beds for 25 to 30 days, turned frequently for even drying and laid out from 10 AM to 2 PM to catch the warmest part of the day. Finally, the dried cherries are milled, sorted, and bagged at the dry mill in Fraijanes.

Native animals and birds move freely across the unfenced farm, coming and going as they please.

    For this natural, only the ripest Catuaí cherries are selected and soaked to remove floaters and lower the microbial count, then dried on raised beds for 25 to 30 days — laid out at 10 AM and collected each afternoon at 2 PM to dry through the warmest part of the day. Milling happens at the dry mill in Fraijanes, where the coffee is sorted, bagged, and prepared for export.
