  • Description:

This Gesha from La Piragua in Huila, Colombia delivers remarkable clarity and sweetness, shaped by the meticulous processing of Arley Vargas and his father. After harvest, the coffee is depulped and fermented for 48 hours in a bioreactor, where variables such as pH, oxygen, pressure, and temperature are precisely measured and controlled. In the cup, delicate aromatics of jasmine and Earl Grey lead into juicy flavors of guava jam and refreshing limeade. It’s a beautiful expression of the cultivar, and one we are very proud to share.

  • Product Info:

      Variety: Gesha

The Gesha coffee variety is renowned for its exquisite flavor profile and unique floral characteristics. Originating from Ethiopia, it was introduced to Costa Rica and later gained international acclaim after being showcased by Esmeralda Farm in Panama. Known for its delicate notes of jasmine, fruit, and a tea-like finish, Gesha offers a complex and nuanced cup that can vary significantly based on its growing conditions. This high-altitude cultivar thrives in rich, volcanic soil, producing exceptional quality coffee that has become highly sought after by coffee enthusiasts around the world.

      Process: Washed

Coffees are carefully harvested and rinsed. The coffee is then depulped and fermented for48 hours in a bioreactor, where variables such as pH, oxygen, pressure, and temperatureare carefully controlled. Then, it is dried on African beds for 18 days.

      Elevation: 1600-1800M

Elevation plays a crucial role in determining the quality and flavor profile of coffee beans. Generally, higher elevations are associated with better quality coffee. As coffee plants grow at higher altitudes, they face cooler temperatures, reduced oxygen levels, and increased exposure to sunlight. These conditions cause the coffee cherries to mature more slowly, allowing them to develop more complex flavors and a higher concentration of sugars.

A coffee profile, also known as a flavor profile or tasting notes, refers to the unique combination of flavors, aromas, and characteristics present in a particular coffee bean or blend. It encompasses a range of sensory attributes such as acidity, body, sweetness, bitterness, aroma, and aftertaste. Coffee profiles can vary widely depending on factors like the bean's origin, variety, processing method, roast level, and brewing technique.
  • La Piragua is a family-run farm where coffee is both heritage and future. Arley works alongside his father, Alexander Vargas, carrying forward Alexander’s deep passion for quality-driven coffee. Together, they focus on sustainable production, weaving regenerative practices into daily farm life and planting trees to support reforestation and long-term soil health. The farm produces both washed and natural coffees, each carefully crafted to showcase a wide range of expressive profiles. The name La Piragua comes from the local word for a boat, an image that reflects the family’s belief in casting their work out into the world and carrying their coffee far beyond the farm.Alexander has seen many young people leave coffee behind, but Arley represents a different path. He has not just joined the family business, he has helped push it forward. With fermentation closely monitored and logged in detailed spreadsheets, small adjustments are made with intention, resulting in coffees that are vibrant, precise, and deeply memorable.
